Most people don’t know that coffee has more flavor compounds than wine. We are constantly on the lookout for the best beans, and looking for new ways to get the best flavor out of them, both at the shop and in your home.

Coffee Can Have More Flavor Than Wine? Yes!

When it’s properly cared for, it can taste of things like:

  • Blueberries
  • Apricots
  • Lavender
  • Milk chocolate
  • Marinara sauce (yes, really!)
  • And so much more

Most of us haven’t experienced that because the United States is dominated by medium and dark-roasted coffee. 

You can think of roasting coffee like caramelizing onions.

You want to cook them enough to break those sugars down into sweet, delicious flavors, but not so much that you burn them. 

When you have exceptional coffee, you want to roast the coffee just enough to bring out those flavors.

If you go too far, you’ll caramelize the nuance out of it, and eventually burn it. 

But to get that nuance, you need high-quality coffee. 

And for several reasons, a lot of the coffee in the United States, Spokane included, is mediocre.

If you try to roast it lightly, it will taste like cardboard and grass. 

Which is why so many “specialty” roasters roast their beans medium to dark. 

It’s the only way to get flavor out of mediocre coffee. 

But when you take the time to find truly exceptional coffee, you would never roast it that far.

How do I try your coffee?

If you're in Spokane, come by and ask one of our baristas to make you a pour-over or an espresso of one of our coffees.

Otherwise, you can order our coffee straight to your door. We even offer a sample pack if you're not sure what to order!

What Makes Your Coffee Different?

We are super coffee nerds and have spent a lot of time (and money) to figure out how to get the best coffee we can.

That comes down to reaching out to special providers, sampling hundreds of beans, and selecting the absolute best we can find.

We have also spent years perfecting our roasting process, and continue to modify it as we learn more about how to get the best, most unique coffee we can.

What is Specialty Coffee?

"Specialty Coffee" refers to high-quality coffee as compared to commodity-grade coffee found on most grocery store shelves and even in cafes.

Technically, it is supposed to score higher than 80 on what's called a cupping score.

Practically, it can have flavors most people have never associated with coffee, like prominent fruity and floral notes.

Is Your Coffee Organic?

Some of it is, but it is expensive to get the USDA Organic certification, and many farmers in other countries can't afford it.

Even if their practices are organic.

So even if our beans aren't certified organic by the USDA, the farming practices needed to achieve truly specialty coffee are often the same.

Why is your coffee more expensive than the coffee at the grocery store?

The coffee at the grocery store is commodity grade. It was mass-produced, mass-harvested (whether it was ripe or not), and lacks the flavor good coffee can have.

The old adage is true — you get what you pay for.

It’s true our coffee is a little more expensive. But we promise you'll taste the difference, you'll think it's worth it. And if you don't like it, we'll give you your money back.

Why Doesn't All Coffee Taste Like Yours?

Most coffee available to roasters in the US is lower quality, even a lot of the purported specialty beans.

Those beans don't taste good as a light roast. They can come out tasting like cardboard and grass, maybe a little lemon if you're lucky.

Therefore, most roasters decided to take their beans darker to force some flavor out of them, even if that flavor is a burned flavor.

Plus, that's what we're used to culturally in this country. We've all grown up on it.

But we want to offer something different. Something elevated. And we think you'll love it.
