Process: Washed, Natural, and Unholy Science

Varietal: A Mystery

Roast Level: Medium-Dark

Flavor Notes: Resurrection, Existential Dread, and Chocolate

All jokes aside, this roast is a composition of our leftover and sample coffees. Sometimes we're aren't left with enough of a certain coffee to roast a whole batch of it.

So we combine these left overs and roast them fairly dark. This accomplishes 2 things:

1) It keeps us from wasting a lot of coffee throughout the year.

2) It demonstrates, by contrast, one of the things we are trying to accomplish as a roaster: Darker roasts obliterate the coffee's natural flavors. 

If we combined 3 months of left overs and roasted them to our normal roast level, it would taste terrible, not unlike the graveyard drinks you'd make a kid at the soda fountain. 

But roast that same blend to a medium-dark level, and voila - you can't tell! It just tastes like "classic" coffee. 

Which should tell you something... "classic coffee" has simply been over roasted and had all of its actual flavor burned out of it.

It's how other roasters cover up that they use low quality beans. 

THAT BEING SAID- we've all grown up with this "style" of coffee and many people love it.
